Beef Tapa Recipe:
Tools and Materials:
Metal Meat Tenderizer
Stainless or glass shallow bowl/dish
Chopping Board, and kitchen knife (sharp)
Packaging material; cellophane or styrohpore
Ingredients:
1 kilo Beef Meat (round steak/strip loin)
Marinating Solution
1/2 cup vinegar
1 teaspoon kalamansi juice
3 tablespoon Soy Sauce
1 teaspoon MSG
1/2 teaspoon pepper corn/pounded
6 cloves garlic (pounded)
1 teaspoon salt peter or praque powder
1 teaspoon accord powder
2 pieces Bay leaf
2 teaspoon Iodized salt
2 tablespoon Brown Sugar
2 tablespoon corn oil
1/4 cup pineapple juice (optional)
Procedure:
Slice meat into thin sheet. Pound slightly with metal meat tenderizer ans set aside. Combine all other ingredients in a bowl and mix thoroughly. Rub meat slices one by one into the mixture over meat and arrange in shallow dish. Pour into the mixture over meat. Let stand over night and cure for 3 days in the refrigerator. After curing drain out marinating mixture and spread on screen sheet. Expose to the sunlight for 1 or 2 days or until dry. Pack in plastic bag and sealed.
