Cassava Bibingka (especial) Recipe:
OMG I am pretty sure for those who are currently living far away from Philippines they miss this Cassava Bibingka recipe. Now you don't need to be so dramatic because you can make it in home, just follow the ingredients and steps from the procedure. I m sure you can make it!
Ingredients:
1 cup grated fresh cassava
1/2 cup scrapped buko (young coco)
2 eggs
3 tablespoon melted shortening
4 tablespoon grated cheese
3/4 sugar
3/4 cup coco milk
1 tablespoon butter
Procedure:
Boat eggs and sugar, melted shortening and coconut milk. Mix with cassava and young coco. Add 2 tablespoon grated cheese and mix well. Line round pan with banana leaves and pour in mixture. Bake in moderate oven. When almost done, brush with butter and sprinkle top with a little sugar and the remaining cheese. Continue baking until golden brown.
