Ready for CountDown?

Oh my God, Are you ready for countdown? We will have a new year for a couple of hours? We have a countdown near in our area in downtown but I couldn't able to go there because it's very cold, I can't deal to endure the coldness outside for couples of hours huhuhu, I can't deal the winter season! But however I will perform the tradition that I have learned from my home country Philippines - I have coins here and dotted dress (w/ white and red color)  that I will wear (lol). According to the Filipinos putting coins in your pocket symbolize for more blessing in the coming new year and same dotted dress symbolizes for money, purity, happiness and love. It is all about for blessings, love and money! You, what do you prepare? Do you have your own tradition too? And one more thing, it says never spend a dime of the January 1st  otherwise you will be extravagant, and you will be spending and spending in the entire year (lol).. Well, there is nothing to lose if we do and believe it right? I wasn't able to reach my family on Christmas!

I really felt bad that I was not able to call my family back home (in the Philippines) on 25th of December, I was eager to great them a happy Christmas but I was not that fortunate. We had troubles for signal particularly in my home island, the signal is very rare and very difficult, we were having a hard time to reach each other, It was so sad...And the other problem was the lines were too busy also, so we had a devastating problems of signals. So I text them instead. I wished I could made them a call on new year. The only communication that I can give to my family daily or weekly is text messages due to the difficulties of phone signals in my hometown, but however, my text is not guaranteed that they will get it. But we have no choice but to do this chance instead of doing nothing! How I wish that the signal there will be better  and improved someday  so I can communicate my family anytime I want. KUTSINTA Recipe

KUTSINTA Recipe:

Ingredients:

1 1/2 cup of water
3/4 cup of sugar
1 cup all purpose flour or 3rd class flour
1 teaspoon lye solution

Procedure:

1. Combine sugar, lye and water and bring to a boil
2. Cool add to rice flour and stir until smooth
3. Pour into kutsinta molds and steam for 15 minutes
4. Serve with grated coconut

Homemade Lye:

1. Burn wood till all into ash
2. Sift and save fine dust
3. Place in a bottle till needed
4. When needed boil enough with equal part of water
5. Strain in double thickness cloth and save water
6. Use water as lye

Christmas is different when you're far from loved ones!

I considered Christmas is different when you're far from loved ones! I am thousands miles far-away from my family in the Philippines and I really miss them so much, I have been far away from them for about 2 years now and I was not with them for 3 Christmas, I spent and witnessed the Christmas here in United States for third times and I don't understand why I can't feel the spirit of Christmas holiday here. Maybe because I was not used to. I Grew up in the different culture and we celebrate the Christmas differently from other countries around the world. There I can feel the spirit of Christmas, the excitement, happiness, joyfulness, love, passion, and excitement for coming present/gifts from Godfather and Godmother, and mainly from Parents, sisters, relatives, and  friends. But, this is my new life so I need to be accustomed to the culture where I belong now, eventually I am going to be used to it.

Christmas Eve was considered a precious time and holiday by the Filipino people, everybody is celebrating it whether without budget or with. Giving present/gifts is somewhat built as a responsibility by the Filipinos (lol). Anyway, Merry Christmas to All of you!

ESPASOL RECIPE

For Especial Espasol: instead of malagkit, use toasted pinipig.

For Semi-Especial espasol: toast together 2 cups malagkit and 2 cups pinipig.

For commercial espasol: same ingredients as above, add 1/2 cup toasted coconut (milk squeezed out) with 3 teaspoon white sugar.

ESPASOL RECIPE:

Ingredients:

1 cup malagkit soaked

4 cup rice flour, toasted until light brown

2 cup sugar

Anis seeds

1 1/2 cup toasted shredded coconut

Procedure:

1. Place sugar anis seeds and coconut milk in a saucepan; let boil until thick.

2. Add toasted shredded coconut and cook for 3 minutes

3. Add  boiled malagkit, stir and cook until thick

4. Remove from fire and add 3 cup toasted rice flour

5. Mix with a wooden spoon and pass through a corn-meal grinder

6. Divide into 2 parts roll 2- 1/2 inches diameter using the rest of the rice flour for rolling.

7. Slice into 1/2 inches thick

8. Yields about 30 pieces

PETSI - PETSI and ESPASOL Recipe

Ingredients:

1 cup cassava

1 cup white sugar

1 cup water

1 cup powder milk

1 teaspoon  Iye water

Procedure:

Mix all then put into the molder steam for 15 minutes.

ESPASOL Recipe:

Ingredients:

4 cups malagkit

3 cup coconut cream (both thick and thin)

1 1/2 cup white sugar

1 teaspoon vanilla

1/2 teaspoon fine salt

sesame seeds

Procedure:

Toast malagkit until golden brown. Cool. then, grind into powder. Set aside 1/2 cup for rolling of finished espasol.

Add all ingredients together. Cook in double broiler or on an ordinary pan over low heat, stirring constantly until it thickens. Remove from heat when oil begins to come out  from mixture.

Spread cooked mixture on floured board and roll out with a rolling pin, 1/4" thick. Cut into desired sizes with a greased knife  (or knive wrapped with banana leaf). Roll out pieces on powdered malagkit, wrap in a wax paper or cellophane.

Sweet Breakfast Grits

Sweet Breakfast Grits recipe:
Grits is delicious at any meal. Prepare grits for breakfast with raisins and cinnamon. " Makes 4 cups."

Ingredients:
1 teaspoon salt
1 cup horminy grits
½ cup raisins
½ teaspoon cinnamon
Milk
Sugar

Procedure:
In a large saucepan, bring 4 cups of water to a boil. Add the salt. Slowly stir in the grits, raisins, and cinnamon. Reduce heat to very low, cover the pan, and cook for 3 minutes, or until all the water has been absorbed. Serve with milk and sugar.

Biometrics early walk-in experience

I went to the application support center in Atlanta for an early walk-in for my biometrics but unfortunately we did not make it. And The thing is - we drove there for about 2 hours back and forth and we got nothing but stress and disappointing because they did not allow me to perform the biometrics because they need the marriage certificate since I am using married name and they need a support document for that, my passport was not enough identification for them since it was under in my maiden name, I was very frustrated to that mistake I made, I really forgot to bring the very important document and my hubby who was driving me over there was very disappointment too, because we spent time, effort and gas to get there, driving about 2 hours for nothing!!!  I can't believe that I was being Inattentive at this time. It's Winter Time!

Today is very cold and I was thinking how much more in the month of January and February. It's difficult for me to adjust the weather in United states since I was not used to. I am from Asia and the weather there is always mild. I already miss the summer weather in United states, but fall and spring are always been a perfect weather for me, don't you think so? Well, obviously it is..But in the summer weather we also experience a very hot weather that makes us suffocated and feel uneasy. Ingredients:

2 cups rice

1 1/2 cups water

1/2 teaspoon salt

1/2 cup boiled rice

1 1/2 cup sugar

2 tablespoon baking powder a little anise

Procedure:

1. Wash rice then soak in water for three hours. Add boiled rice and grind fine.

2. Add in sugar and baking powder, salt, and anise seeds.

3. Pour into mold and steam until tester comes out clean

4. You may tint the puto in different colors.

Ingredients:

4 large, ripe sab banana

12 teaspoon brown sugar

12 strips ripe langka

2 teaspoon sesame seeds

12 lumpia wrapper oil for deep frying

Procedure:

Slice the banana lengthwise, make a lit at the side of each and stuff with 1 teaspoon brown sugar, strip of langka and 1/2 teaspoon sesame seeds. Wrap tightly with lumpia wrapper and let it stand for few minutes. Fry in deep hot fat until golden brown. Serve hot.

Ingredients:

2 cups malagkit rice

1 cup rice

3 1/2 cup coconut milk

1 cup white sugar

Procedure:

Wash rice thoroughly. Soak in a 1 1/2 cup water for 4 hours. Grind in a native stone grinder. For every cup of this ground mixture or "galapong" add 1/2 cup coconut milk and 1/3 cup sugar. Cook while stirring constantly until thick. Wrap 2 tablespoon or this mixtures, topped with latik, in a banana leaves previously passed over the flame. Tie in pairs the steam for 30 minutes.

Puto Maya Recipe

Puto Maya Recipe:

Ingredients:

3 cups malagkit, soaked overnight

5 cup coconut milk

1 cup white sugar

1 small coco grated powder ginger

1 tablespoon salt

Procedure:

Drain soaked malagkit and put two quart saucepan or kettle, add the coco milk and cook over high heat until the steam escapes from the edge of the cover. Lower down the heat and allow to steam until done. Mold each serving using a coffee cup and unmold, into a saucer. Place sugar and grated coco on the top of each mold.

Oldest Bongo in North America Dies at Zoo Atlanta

On October 20, Zoo atlanta president and CEO dennis Kelly announced that Mzima, a 19 year-old female eastern bongo, was euthanized due to age-related declining health. At 19, Mzima was  the oldest bongo living in an Association of Zoos and Aquariums-accredited institution in North America. She was also the second-oldest eastern bongo in captivity worldwide.

Born November 6, 1989 at Gladys Porter Zoo in Brownsville, texas, Mzima arrived at Zoo  Atlanta in 2004. " Our veterinary and animal management team worked diligently to ensure that Mzima received the best treatment possible," said kelly. " The fact that she was the oldest bongo in North America is a testament  to the excellent care she received throughout her life."

As is the case with all animal deaths, regardless of age, a necropsy will be performed through Zoo Atlanta's partnership with the  Department of Pathology in the college of veterinary Medicine at the UNiversity of Georgia.

Eastern Bongos are among the zoo's most endangered mammals, with fewer than 500 believed to remain  in the wild. Zoo Atlanta is a member of the AZA Bongo Species Survival Plan, which seeks to maintain a self-sustaining, genetically diverse population within North American Zoos.
