1 cup fruit cocktail juice
1 cup of water mix
Procedure:
> Boil juice with water and dissolve knox, stir constantly until well melt; set aside.
> Mix condensed, nestle and knox mixture - then pour to settled molden with cocktail fruit.
> Chill until well firm.

5. In a separate pan, at least 2 tablespoon sugar and heat directly in low fire. Cool
6. Steam for 10 - 15 minutes

Serve 8 slice; this is one of my favorite desserts!
Ingredients:
1 cup sugar
8 egg yolks
2 egg white, condensed milk
1 cup water
2 tablespoon sugar
2 tablespoon sugar
Rind of one dayap, grated
1x4 oz. (397 g.) can full cream
Procedure:
>Caramelize sugar by stirring continuously over medium heat until melted. Pour into flan mould and tilt to cover the sides of pan up to two inches high.
> Beat egg yolks and eggwite slightly. Add condensed milk, water, sugar, and dayap rind. Strain and pour mixture into the caramel lined flan mould.
> Placemould in another bigger sauce pan (bain marie) filled with 1 inch water. Bring to a boil and simmer for 40 minutes or until firm. Cool for removing flan moulds.

2 cups milk (fresh and undiluted)
1/2 cup water
1 3/4 cup sugar
juices of 2 calamansi (lemon)
1x4 oz (125 grams) can nestle cream
12 lady finger
cherries for decorating
Procedure:
Soak powdered gelatin in juice drained from fruit cocktail. Heat the milk and the water add the gelatin and the sugar and cook until gelatin is melted. Put in calamansi juice (lemon juice) and allow to cool. Add nestle cream and cool until just at the point of setting arrange ladyfinger in side ring moulds and pour the gelatin mixtures over-chill. When set, turn over and platter and decorated to serve.

1 can evap.
2 eggs of milk
Procedure:
Combine two kinds of milk of fresh to a mixer. Add young coco and beaten egg white. Blend and fresh in freshline apoinl.
FIESTA CHICKEN GALANTINA
1 piece chicken (1.2 - 1.4 kg) deboned
1 tablespoon lea & perrins Worcestershire sauce
1/2 teaspoon salt
1/2 teaspoon pepper
1 tablespoon calamansi juice
2 cans chorizo bilbao, ground
1/2 cup cheddar cheese, grated
1/2 cup celery, chopped
1/4 pickle relish egg beaten
4-5 strips cheddar cheese
4-5 strip carrots
Procedure:
Marinate chicken in Lea & Perrins Worcestershire sauce, salt, pepper, and calamansi juice (lemon juice). Keep in refrigerator for at least an hour.
Combine remaining ingredients to make stuffing. Fill chickens and sew opening. Wrap chicken in thin plastic sheer and place in a microwave safe pan. Microwave at 50% (med) power for 20 minutes then another 10 minutes at 100% (high). Power level. Remove from oven. Allow to cool slice and serve.

Ingredients: For Caramel
1 cup sugar
1/4 cup water
Ingredients for custard:
12 eggs yolks
2 can 370 ml. Alaska Evap.
1 can 300 ml. Alaska sweeten, condensed milk
1 teaspoon vanilla essence
macapuno strips as garnish
To make the Caramel:
Boil the sugar and water in a saucepan and stir continuously over medium heat until sugar is melted. Pour the caramelized syrup in Flan moulds or custard cups, tiling the moulds to make sure the whole surface is covered. Set Aside.
To make the custard:
Combine the ingredients in a large bowl. Stir slightly when mixing to prevent bubbles or foams from forming. Strain slowly, while pouring into the caramel lined moulds. Pre heat the oven to 160 degree celcius (350 Fahrenheit) cover the moulds with aluminum foil and place in a larger tray filled with water. Bake in the oven for 1 hour or until the mixture is firm. Cool before unmoulding into a platter. Top with macapono as garnish. Serve 3-4 people.

Ingeredients:
1 teaspoon salt
1 ¼ cups yellow or white cornmeal
Butter
Pancake syrrup
Prodecure:
In a large saucepan, add the salt to 2 ½ cups of water. Bring to a boil. In a mixing bowl, combine the cornmeal and 1 cup cold water. Stir vigorously to make a thick batter, or much. Add the cornmeal mush to the boiling, salted water. Reduce heat, cover the saucepan, and cook over low heat for about 5 minutes, stirring occasionally.
Pour the cornmeal into a buttered 8 ½ x 4 ½ x 2 ½-inch loaf pan. Chill until firmly set, about 1 hour. Cut into ½-inch slices. Lightly grease a griddle or skillet and preheat. Fry the cornmeal slices over medium-high heat until really crisp, about 5 minutes. Serve hot with butter and pancake syrup.

1 all purpose cream
For Dressing:
1/2 cup mayonnaise
Procedure:
> Wash the cabbage thoroughly. Cut it into quarters. Cut off the core from each quarter. Shred the cabbage into thin strips using a sharp knife. Place it in a colander to drain. Set aside. Make sure that the cabbage is totally dry before mixing it with the other ingredients.
> Mix the other ingredients to a bowl (except the cucumber). Add the shredded cabbage. Mix well.
> Slice the cucumber lengthwise into a long strip. Remove the seeds. Cut some into bits size wedges. Then add it into the prepared cabbage.
> season it then mix well.
> Cover the salad bowl with a damp cloth or aluminum foil and refrigerate it for at least one hour.
> Add the mayonnaise and carefully toss the ingredients.
> serve cold.
Note: Additional all purpose cream to make it palatable

Eggs Benedict for two Recipe:
Serves 2
Ingredients:
1 teaspoon corn oil
8 slices Canadian bacon
1 teaspoon white vinegar
4 eggs
2 tablespoons butter
2 tablespoons flour
1 cup milk
1 cup shredded Cheddar cheese
2 English muffins, split, toasted, and buttered
Lightly grease a large frying pan with the corn oil. Heat over medium-high heat. Add the Cannadian bacon and cook until well donw, about 5 minutes. Drain the the bacon on paper toweling. Keep warm.
Bring 2 cups of water to a boil in the bottom of a 4 egg poaching pan. Place ¼ teaspoon vinegar one egg in each of the cups, and cover. Cook for 2 to 3 minutes. (If you don’t have a poaching pan, cook the eggs for 2 to 3 minutes in a small pot of simmering water to which 2 teaspoons of white vinegar has been added.)
While the eggs are cooking, melt the butter in another saucepan. Stir in the flour. Gradually add the milk, stirring constantly. Add cheese, sitrring until melted.
Place two slices of Cannadian bacon on each English muffin half. Using a slotted spoon, drain the eggs and place one poached egg on each muffin. Pour the cheese sauce over each egg and serve hot.

Biscuits Ingredients:
2 cups flour4 teaspoons baking powder2 teaspoons sugar½ teaspoon cream of tartar½ teaspoon salt½ cup shortening2/3 cup milk
Procedure:
Preheat the oven to 450 degree Fahrenheit. In a large bowl, combine the dry ingredients. Cut in the shortening until the mixture resembles coarse crumbs. Make a well in the center and add the milk all at once. Incorporate gently until the dough begins to stick together. Knead the dough on a lightly floured board for 10 to 12 strokes. Roll or pat to ½-inch thickness. Try not to handle the dough too much. Cut the dough with a biscuit cutter or slice into squares with a sharp knife. Dip the cutter in flour between cuts. Transfer to an ungreased baking sheet. Bake for 10 to 12 minutes or until golden. Serve warm.
Red-eye Gravy Ingredients:
Dripping from 1 pound cooked bacon1/3 cup strong black coffee
Procedure:
In a large, cast iron skillet, heat the bacon drippings. Add the black coffee. Bring the drippings and coffee to a gentle simmer. Cook, stir constantly for 3 minutes.

3 teaspoon white sugar
Procedure:
> combine cooked chicken, mango, papaya del monte fresh cut pineapple chunks and nata de coco. Chill.
> In a bowl, mix together ingredients. For dressing. Pour own chicken fruit mixture.
> chill and serve with cashew nuts. Make 6 serving
