Buko Pandan Salad:

Ingredients:
1 bar gulaman green color
2 cup coconut young meat
1 1/2 cup all purpose cream
1/4 cup condense milk
1 cup nata de coco
1/2 cup white sugar

Procedure:
Dissolve gulaman flakes in cup water.Boil 1 cup water with 1/2 cup sugar continue to stir until sugar will melt and crystallize, then pour dissolve gulaman and boil after then pour into molder to set and cut into cubes. Soak coconut meat in ice water. Whip all purpose cream with the use of electric mixture until cream with frothy. Combine young coconut meat, all purpose cream, condensed milk, and nata de coco and toss gulaman cubes. Chill.

2 cups young coconut meat, cut in stripe

1 cup crushed pineapple, drained

1 (170 gm.) can of thick cream

3 tablespoon white sugar

Procedure:

- Soak blanch ubod in ice water with buko, drain just before mixing

-Combine cream, mayonnaise, salt, pepper, and sugar mix well

-Add the rest of the ingredients, mix well and chill

-serve cold in young coco, chill halve

- serve 8-10.

Makes 10 to 12 Muffins

Ingredients;
1 1/4 cups corn meal
1 cup unsifted flour
1/4 cup sugar
1 teaspoon salt
1/4 cup packed brown sugar
1 egg
1 cup buttermilk
3/4 cup corn oil
1 1/2 cups fresh or frozen blueberries

Procedure;
Preheat the oven to 425 degree Fahrenheit. Grease a 12-muffin tin with butter. Combine the dry ingredients in a large mixing bowl. In another bowl, combine the egg, buttermilk, and oil and blend with a wire whisk. Pour the egg mixture into the dry ingredients, stirring until blended. Fold the blueberries into the batter. Be careful not to over mix or the batter will turn blue. Spoon the batter into the greased muffin tin. Bake for 20 minutes. Serve the muffins warm with butter.

Guess what?
